To show the variety of consuming pistachios at any time of the day and in any food, Chef Geovana Sitja prepared some dishes.
First, we started with a fresh and delicious pistachio horchata, based on the traditional horchata or Valencian tiger nut. We continued with a delicious pistachio-crusted salmon, which was breaded with pistachio, the olive oil, Dijon mustard, black pepper and lemon juice, which, combined with fresh vegetables, was an absolute delight to the palate.
And we were left wanting to try the grilled salmon, created by chef Art Smith, which has a couscous base with diced pistachio and dressed with extra virgin olive oil, vinegar, finely chopped chives, pepper, lemon and mint to give it that fresh touch.
Then we tried a dessert of pistachio tiramisu with Greek yoghurt that enhanced the pistachio flavour in an ideal sweetness with honey to be enjoyed without remorse.
